To be vegan isn’t easy. To make it also keto (high-fat and low-carb) is an additional challenge. The Vegan Ketogenic Diet Cookbook surpasses this hurdle with 75 recipes and many helpful tips for new dieters.
The book begins with the following benefits of being on a vegan keto diet:

- Stabilized blood sugar
- Reduced inflammation
- Reduced cravings
- Weight loss
- Reduced risk of major diseases like diabetes, cancer, heart disease and neurological illnesses
- Healthier planet
It continues with an Eat This, Not That section for each type of food. It also has two weeks of meal plans to start your vegan keto journey off right. The meal plans also include pantry and refrigerated staples as well as a shopping list for other items needed to make the suggested recipes.
However, the best part is the recipes. There are eight sauces and dressings. Ten breakfast recipes include the yummy sounding Matcha Donuts and Chia Parfait. A note for those also following a gluten-free diet: This book uses mostly almond, coconut or other non-wheat flours so can be easily followed without worry. The snacks section contains a recipe for Jalapeno Poppers that is totally gluten-free (and the first one I’ve found that doesn’t just replace wheat flour with a one-to-one flour but instead uses cauliflower rice for the coating). There are thirteen salads and twelve soups including Vegan Pho and Thai Yum Yum Soup. The thirteen main dishes include pizza, tacos, chili, kebabs, and shepherd’s pie. Finally, the seven dessert recipes include ice cream, cookies, “cheesecake” bites, and chocolate mousse pie cups.
The recipes include relatively few ingredients, easy-to-follow instructions, and full nutritional information. Unfortunately, there are few photographs but I think the clear explanations of the vegan keto diet makes up for that flaw. If you are thinking of going vegan keto (or just eating more healthy foods occasionally), the Vegan Ketogenic Diet Cookbook is a great tool to achieving your goal. 4.5 stars!
