Truly Healthy Vegan Cookbook

Truly Healthy Vegan Cookbook

Are you making a New Year’s resolution to eat less meat and dairy? Do you want to reduce your carbon footprint by eating more fruits and vegetables? Are you tried of eating fast food but don’t have the money for expensive ingredients? The Truly Healthy Vegan Cookbook can help you with all of these issues.

The book begins with a short section about what it means to be a vegan, the top ten mistakes made by vegans, and how to avoid eating fattening junk food. Next up is a Basics section filled with broths, veggie rice/pasta, sauces and dressings. It also includes a recipe using cauliflower, mushrooms and walnuts to make homemade vegetable crumbles. That alone will save you the cost of this book. Other chapters contain breakfasts, salads, soups, stews, burgers, sandwiches, wraps, sides, pastas, noodles, rice, sweets, and dinner main dishes. Each recipe has tags for gluten-free, nut-free, soy-free, oil-free, and low-carb recipes. They also have full nutritional information including calories.

The recipes are innovative veggie takes on popular food trends. Some examples are Cauliflower Banh Mi, Chickpea Pot Pie, Eggplant Marsala, Chickpea Cacciatore, Crispy Artichoke Tacos, and Strawberry Nice Cream (made with frozen bananas).

The Truly Healthy Vegan Cookbook is an excellent gift for a new vegan or vegetarian. It would also be good for twenty-year-olds who are moving out on their own for the first time. None of the recipes are costly to make making them perfect for those watching their budget. In addition, most recipes are quick and easy to make. 5 stars!
